vegan MoFo day 20: make'n awesome with leftovers - scrambled grits.



the other morning i enjoyed Stephanie's nice ass greens alongside buttery grits. having some grits leftover i put my thinking cap on and decided to give them a whirl using them as the base to a scramble. and so it was - scrambled grits with black-eyed peas, tomatoes, onion, & pepper jack daiya. wowzers. so yum!

i simply sauteed the onion and tomatoes until the onion softened - then added the black-eyed peas along with a little sea salt 'n pepper. gave that a minute to get good 'n tasty then i added in about 1 tsp of olive oil & about a 1/2 cup of cold grits i had smashed up with a fork. sauteed for another few minutes to get some of the grits a little browned, then tossed in a few pinches of pepper jack daiya, cooked until melty, and that was it. this was so super delicious and the combinations you could play around with are endless. next time i'm going to make a spciy mushroom-jalapeno-onion scramble. it's gonna be glorious!

Yummo! I've used creamy polenta for a scramble before and it was fantastic. But that was years ago so thanks for the reminder, Jessy!

And yup, order VCIYCJ and hunt down some cherries so you can enjoy the bestest cookies in the world!

This looks so good! I don't eat nearly enough polenta, I always forget how delicious it is. Is that plantains and ketchup on the side? Gah, must make this pronto!

Scrambled grits! Brilliant. I am so bad about using up leftovers, especially with something like MoFo, where you've promised something new everyday. Actually, out of curiosity - do you scale down the recipes you made this month?
ANyway, looks great. Also the plantains!

Mandee - i was so excited to find out about scambled grits. they were crazy good! i'm on the hunt for dried cherries, too - i cannot wait!

i'm with you, Dawn - using up leftovers is the best. especially when ya can find new & creative ways to use them up. so yum!

foodfued - we don't scale down the recipes, but we do eat A LOT of leftovers and julie (our dog) also enjoys a few of our eats from time to time, too. :D

Looks yum! I'm a leftovers junkie. Pretty much everyday I look in the fridge @ lunch time and throw a bunch of leftovers in a wrap with some greens and some sort of dressing. Never had a bad wrap yet :)

wow, that looks crazy good! Leftover nights are fun, because you aren't already tired from cooking, and you can be playful with whatever you've got.

I love me some grits! I'm the only one in our house that loves them. I guess cuz I grew up with my granny cooking them for us kids.
Pepper Jack Daiya is our favorite flavor.
