we hope everyone is having a wonderful 4th of july weekend! just wanted to post up yummies from days twenty four and twenty five before we get swept up in all the glorious fun this weekend! morning juice on wednesday: swiss chard, carrot, orange, cucumber. smoothie: the same as yesterday's! mmmmmmmm! lunch time yummies wednesday was a huge salad topped with a chopped up garden herb sunshine burger, carrots, tomatoes, cucumbers, and pumpkin seeds - so delicious, fo 'sho!
more watermelon was enjoyed as well! i think i'm addicted! ahahahhahahahaa!dinner last night was fun & fresh! we made an easy quinoa salad and tossed in a bunch of veggies we had that needed to be used up.
for the veggies: bell pepper, radish, tomatoes, cucumbers, red onion, and carrots. we added in some cooked chickpeas and spices 'n such used were: cold-pressed olive oil, cumin, balsamic vinegar, chili flakes, sea salt, pepper, fresh parsley, and lots of fresh lime juice! such a rock'n dish - especially when it was served on top of more csa spring mix and drizzled with a tangy raw tahini dressing! mmmmmmmmmmmmmmmm!
friday was another rock'n day of deliciousnesses! morning juice & smoothie were the same as thursday! why change a good thing, right?!
for lunch time eatz i roasted up half of a csa eggplant and tossed it on top of a giant salad with some tomatoes, cucumbers, red onion, and pumpkin seedz! awesome sauce! yeah, that's more watermelon! ;)
dinner last night was a bit of a "treat" - i wasn't feeling a salad so dan and i made katie's tempeh wingz using teff & brown rice flour and we made bread crumbs with foods for life gluten-free brown rice bread so the recipe would be gluten-free! what we loved most about this meal is that it was mostly local! the tempeh is local, the potatoes & green beans came from our csa, the garlic i bought at the farmer's market and the rosemary came from our garden! how awesome is that?!? hoooooooooooray!we hope everyone's having an amazing long weekend full of smiles, laughter, hugs, fun, family, and friends! enjoy!
