
one of our absolute favorite bugers are butter bean burgers! i don’t know what it is about them, but we loooooove them. and since we haven’t had them in a while i thought it was about time to make some more butter bean deliciousnesses! using some of our local peppers we made up a batch – i’ll warn you that this recipe makes a BUNCH o’ burgers. 6 medium sized ones, to be exact. feel free to half the recipe if ya just want a few – and these guys freeze really well if you want some @ a later date, too! doublew00t!
here’s what we did for this batch...
ingredients:
1 red aruba pepper, diced
1 sun bell pepper, diced
1 yellow onion, diced
20 saltines
4 cups cooked butter beans (large lima beans. we cooked ours in the crock pot.) pinch of sea salt
1 tsp olive oil (or olive oil cooking spray)
¼ cup nutritional yeast
½ tsp onion powder
½ tsp garlic powder
3 cloves garlic, minced
½ fresh jalapeno, seeded & very finely minced (more if you want extra heat!)
1/3 cup yellow cornmeal
what you’ll need:
- large mixing bowl
- food processor (optional)
- potato smasher
- large skillet
- olive oil cooking spray
what’cha gotta do:
heat up 1 tsp olive oil in the large skillet. sauté all the peppers (including jalapenos) and onion until they begin to brown. stir in minced garlic and spices. sauté for 2 more minutes. remove from heat. place saltines in food processor (or crush up by hand) and pulse until fine. toss the cooked butter beans into the mixing bowl and smash well. add in saltines to mixing bowl with smashed beans. transfer the pepper & onion mix into the food processor (this is optional – if you want to just toss them into the burger mix without pulsing them up a bit you totally can!) and pulse until well combined. add the pulsed onion & pepper mix, along with the nutritional yeast, into the bowl with the smashed beans & saltines. mix everything well with your hands – making sure it’s well combined. create your patties (we made 6) and then roll them in the cornmeal (making sure to coat both sides & the “edges”). heat up a little cooking spray in the large skillet on medium heat & sauté until browned up a bit on both sides (about 2-4 minutes on each side). remove from heat & enjoy! :D these are super tasty with a little vegenaise, avocado, or salsa on top! we’ve been known to eat ‘em plain, too – they’re just that darn tasty!

these look so good! i've had a couple cans of butter beans in my cabinet for like... a year and i think i will use it on this. i used part of one in some gluten sausage and they were the PERFECT texture, so i'm sure they'll be great in this.

thanks, Jennifer! these guys do hold together really well. that's why i love them so much. i think the texture of the butter beans makes 'em stick better than the kidney bean patties we've made. and pulsing up the onions & peppers really helps bind everything together, too!
you should totally try some butter beans sometime, Jennifer! if you can't find them locally (we have them locally but they're pre-shelled - and i refuse to buy them because they're in a plastic clam-shell container. argh!) use some bulk ones (that's what we do) - they're sooooo goooood! ;) and i bet they'd be even more awesome with some of your homemade salsas & sauces on top! mmmmmm!
